Our Johanniter grape is a new grape variety with resistant characteristics from the PiWi family. This first micro-production of ours presents a vinification aimed at expressing the Johanniter grape at its best and, above all, getting to know it better.

Vinification:

After harvesting by hand into 5 kg crates, the Johanniter grapes are immediately cooled. When they reach 8°C, they are destemmed and macerated in the press in the presence of nitrogen to prevent oxidation. This process lasts 12 hours. The grapes are then pressed and clarified by gravity before fermentation at a controlled temperature of 14°C. Fermentation lasts about 20 days and after fermentation the wine is decanted several times and matured in steel barrels. Before bottling, the wine is lightly filtered.

Tasting notes:

Straw yellow in color with a tendency to green, it is floral on the nose with hints of flowers and a fresh minerality. In the mouth it confirms the aromas with good fresh acidity. It is a ready-to-drink summer wine with an aging capacity of 1-2 years.

Wine for aperitifs and light appetisers.
