Our pure Manzoni Bianco is the result of 10 years of work with successes and failures. Today it has a straw colour and intense aromas of citrus fruits. On the palate there is a balanced acidity and hints of grapefruit

Vinification:

During harvesting, which is strictly by hand, the grapes are placed in 5kg crates then stacked in a cold room to lower the temperature. Once the temperature reaches 8-10°C, the grapes are loaded whole into the press for gentle pressing. To preserve the fermentation aromas, fermentation takes place in steel barrels at a controlled temperature between 14 and 16°C. After fermentation, the wine remains at a controlled temperature on its own yeasts until it is decanted and clarified in the spring. Before bottling, it is lightly filtered.

Tasting notes:

The nose is semi-aromatic and intense. The palate reveals a balanced acidity with hints of grapefruit. The perfect harmony between aromas, acidity and alcohol gives Manzoni Bianco its characteristic character, as well as guaranteeing it a certain persistence.

Food pairing:

Ideal for sea fish or white asparagus.
