This flagship wine has been with us since the beginning. The first vineyards we renovated are now 20 years old and are the very ones used for this wine. The vanL, Cabernet Franc and Oseletta, is a wine of great structure and depth, produced from grapes that are managed to achieve quality and not quantity. And this care, in the wine, is felt throughout.

Vinification:

After selective harvesting by hand, the grapes are de-harvested and cooled to -10°C. This allows the crushed grapes to undergo a cold pre-fermentation maceration. After 48 hours, the crushed grapes are heated and selected yeasts are inoculated. Fermentation takes place in temperature-controlled steel barrels. After fermentation, the wine spends a couple of days in alcoholic maceration before being racked off. For malolactic fermentation, the wine is racked into barriques, where it remains for 18 months to refine. Before bottling, the wine spends a short further aging period in steel and is lightly filtered.

Tasting notes:

Intense ruby red in colour, the wine is intense and very full-bodied. On the palate with hints of tobacco and dark chocolate together with blackberries and prunes. The harmony between tannins, acidity and alcohol provides soft and dry sensations at the same time. Finally, the persistence is remarkable with an acidity that, even after 9 years, does not tire and remains pleasant. This wine is still developing and maturing.

Food pairing:

Ideal for all important red meat or game dishes, with savoury sauces. Also perfect with mature cheeses.
