Spumante Brut ‘il Manzoni’ is a unique wine, a sparkling wine made from Manzoni Bianco grapes, grapes that are normally not suitable for sparkling wine-making due to their sweetness.  By adopting a special technique for sparkling the must, we were able to obtain a sparkling wine with strong fermentation notes: citrus aroma and great fruity freshness on the palate.

Vinification:

After careful harvesting into 5 kg crates, the grapes are placed in a cold store to chill until the next morning, when they reach about 8 °C. The cold grapes are pressed whole and the must is clarified by static decantation with the addition of selected yeasts. Fermentation takes place at a controlled temperature. Before the end of fermentation, the must-wine is racked into an autoclave, where natural sparkling takes place. Here Manzoni Spumante Brut becomes a young wine with minimal additions of sulfur dioxide. A natural wine.

Tasting notes:

Slightly fruity, with soft bubbles, the Manzoni Spumante Brut presents itself on the nose as semi-aromatic with hints of peach and citrus fruits, while on the palate the hint of apple prevails. In conclusion, it is a sparkling wine with minimal additions of sulphur dioxide, slightly aromatic but with a well-defined character.
