Spumante Brut ‘il Manzoni’ is a distinctive sparkling wine crafted from Manzoni Bianco grapes, which are typically not used for sparkling wines due to their inherent sweetness. Through our innovative sparkling technique applied to the must, we’ve created a vibrant sparkling wine that showcases pronounced fermentation characteristics: citrus aromas and a remarkably fresh, fruity profile on the palate.
Vinification:
After careful harvesting into 5 kg crates, the grapes are placed in a cold store to chill until the next morning, when they reach about 8 °C. The cold grapes are pressed whole and the must is clarified by static decantation with the addition of selected yeasts. Fermentation takes place at a controlled temperature. Before the end of fermentation, the must-wine is racked into an autoclave, where natural sparkling takes place. Here Manzoni Spumante Brut becomes a young wine with minimal additions of sulfur dioxide. A natural wine.
Tasting notes:
Slightly fruity, with soft bubbles, the Manzoni Spumante Brut presents itself on the nose as semi-aromatic with hints of peach and citrus fruits, while on the palate the hint of apple prevails. In conclusion, it is a sparkling wine with minimal additions of sulphur dioxide, slightly aromatic but with a well-defined character.
