The Solaris grape is a new PIWI variety, resistant to all fungal diseases. Our first micro-production presents a vinification aimed at expressing the Solaris grape at its best.

Vinification:

Vinification of this intense, semi-aromatic grape variety is aimed at enhancing secondary aromas suitable for ageing. The grapes are harvested in 15 kg crates and immediately placed in cold storage to reduce the temperature to 8 °C. The grapes are then pressed whole and the must clarified using the static method. Fermentation with selected yeasts and temperature control takes place at about 18°C and lasts about 20 days. Maturation in stainless steel for 8 months allows Solaris to develop its typical aromas. Before bottling, the wine is slightly filtered, but is otherwise kept pure and natural.

Tasting notes:

Straw yellow in colour with good intensity, Solaris presents itself on the nose rich in very ripe fruity aromas of yellow peach with slight floral and herbaceous hints. Its persistent length and soft acidity make it a challenging wine. The wine is immediately ready, but has a development over the maturing years of at least 3 – 5 years.

Perfect with seafood or shellfish dishes or even a rich fish soup.
