Follia is our Orange wine, a style of white wine made with extended skin-contact fermentation using wild yeasts. This ancient method, originating in Georgia thousands of years ago, involves macerating white grapes on their skins and seeds.
Vinification:
Hand-harvested in September and vinified using spontaneous fermentation in stainless steel tanks. Extended maceration on the skins through malolactic fermentation extracts fine-grained tannins that provide structure and natural oxidative protection. Pressed in January and aged 12 months in oak before bottling with minimal filtration. This Wine is made with minimal intervention, without temperature control, and extended maceration well into January.
Tasting notes:
A wine with decisive tannins, characteristic bitterness, complex herbal and spice aromatics, and a distinctive amber hue.
Food pairing:
Excellent as aperitivo or paired with spiced and richly flavoured cuisine.
